- Sweet Potatoes2 medium
- Black Beans, Canned2 cans (15 oz)
- Kidney Beans, Canned1 can (15 oz)
- Diced Tomatoes, Canned1 can (28 oz)
- Onion1 large
- Garlic4 cloves
- Chili Powder2 tbsp
- Cumin1 tsp
- Smoked Paprika1 tsp
- Vegetable Broth1 cup
- Olive Oil2 tbsp
Method

Dice sweet potatoes into 1/2-inch cubes.

Heat oil in a large pot over medium. Cook onion 5 minutes, add garlic, chili powder, cumin, and paprika; stir 1 minute.

Add sweet potatoes, diced tomatoes, broth, and all beans. Bring to a boil.

Reduce heat and simmer 25-30 minutes until sweet potatoes are tender.
