Preheat oven to 425F. Line a baking sheet with parchment paper and lightly spray with cooking spray.

Microwave sweet potato for 5-6 minutes until very soft. Scoop out flesh and mash until smooth. Let cool slightly.

Cut chicken breast into bite-sized nugget pieces. In a bowl, combine mashed sweet potato with the chicken pieces, garlic powder, onion powder, salt, and pepper. Toss to coat.

Set up breading station: flour in one dish, beaten egg in another, panko breadcrumbs in a third. Dredge each coated nugget in flour, then egg, then panko. Place on baking sheet.
