- Whole Milk1/2 cup

Method

Preheat oven to 425F. Peel sweet potato, dice into 1-inch cubes, toss with olive oil, and roast on a baking sheet for 20-25 minutes until fork-tender.

Cook pasta shells in salted water until al dente. Drain, reserving 1/2 cup pasta water.

Blend roasted sweet potato with milk, a splash of pasta water, garlic powder, smoked paprika, salt, and pepper until completely smooth.
