Tater Tot Casserole

Ground beef in a creamy sauce topped with a full layer of crispy tater tots and baked until golden. This is the elevated comfort food version -- real cheese sauce, not cream of mushroom soup. Kids see the tater tots on top and they're already sitting at the table.

Ingredients

  • Ground Beef (80/20)1 1/2 lbs
  • Frozen Tater Tots (32 oz bag)1 bag
  • Shredded Cheddar Cheese2 cups
  • Sour Cream1/2 cup
  • Beef Broth1/2 cup
  • Yellow Onion, diced1 medium
  • Garlic Powder1 tsp

Method

  1. 01

    Preheat oven to 400F.

  2. 02

Brown ground beef with onion in a large oven-safe skillet over medium-high heat, breaking it up, about 6 minutes. Drain fat. Season with garlic powder, salt, and pepper.

  3. 03

Add beef broth. Stir in sour cream and 1 cup shredded cheese. Stir until melted and creamy. Remove from heat.

  4. 04

If not using an oven-safe skillet, transfer to a 9x13 baking dish. Arrange tater tots in a single layer on top, covering the entire surface.

  5. 05

Bake 20 minutes until tater tots are golden and crispy.

  6. 06

Scatter remaining cheese over the top. Bake 3-5 more minutes until cheese is melted.
