Ingredients

  • Roma or Plum Tomatoes3 lbs
  • Canned Whole Tomatoes28 oz
  • Onion1 large
  • Garlic5 cloves
  • Olive Oil3 tbsp
  • Vegetable Broth2 cups
  • Heavy Cream or Half-and-half1/2 cup
  • Fresh Basil1/2 cup packed
  • Sugar1 tsp

Method

    Preheat oven to 425°F. Halve Roma tomatoes, place cut-side up on a baking sheet with onion quarters and garlic. Drizzle with olive oil, season with salt and pepper.

    Roast 30–35 minutes until tomatoes are caramelized and slightly charred. Let cool slightly.

    Transfer roasted vegetables to a large pot. Add canned tomatoes, broth, and sugar. Simmer 10 minutes.

    Remove from heat. Add basil. Blend until smooth with an immersion blender (or in batches in a regular blender, careful with steam).

    Stir in cream. Taste and adjust seasoning. Serve with crusty bread or grilled cheese.
