  • Beef Chuck, cut in 1-inch cubes1 1/2 lbs
  • Russet Potatoes, diced2 medium
  • Carrots, sliced3 medium
  • Celery, sliced2 stalks
  • Yellow Onion, diced1 large
  • Beef Broth6 cups
  • Diced Tomatoes, canned (14.5 oz)1 can
  • Tomato Paste2 tbsp
  • Green Beans, cut in 1-inch pieces1 1/2 cups
  • Worcestershire Sauce1 tbsp

Method

  1. 01

    Cut beef chuck into 1-inch cubes. Season with salt and pepper.

    Heat oil in a large heavy pot or Dutch oven over medium-high heat. Brown beef in batches, 3-4 minutes per batch. Do not overcrowd. Transfer to a plate.

    In the same pot, cook diced onion, carrots, and celery until softened, about 5 minutes.

    Add garlic, tomato paste, and stir for 1 minute.

    Return beef to the pot. Add diced tomatoes, beef broth, potatoes, bay leaves, thyme, and Worcestershire sauce.

    Bring to a boil, reduce heat to low, cover, and simmer 60-70 minutes until beef is tender.

    Add green beans in the last 10 minutes of cooking.

    Remove bay leaves, taste for seasoning, and serve.
