Veggie-Loaded Meat Sauce
A thick meat sauce with a full cup of grated carrots and zucchini cooked completely into the tomato base. The vegetables disappear. The sauce tastes like the best possible spaghetti sauce. Serves over pasta, in lasagna, on pizza.

Ingredients
- Ground Beef (80/20)1 lb
- Crushed Tomatoes1 can (28 oz)
- Tomato Paste2 tbsp
- Carrots2 medium, grated
- Zucchini1 medium, grated
- Yellow Onion1 medium, diced
- Garlic4 cloves, minced
- Dried Oregano1 tsp
- Dried Basil1 tsp
- Olive Oil2 tbsp
Method

Grate carrots and zucchini on the large holes of a box grater. Squeeze in a towel to remove excess moisture.

Heat olive oil in a large pot over medium-high. Brown ground beef, breaking up, 6 minutes. Drain fat.

Add diced onion and cook 3 minutes. Add grated carrots and zucchini. Cook, stirring, 4 minutes until vegetables soften.

Add minced garlic and tomato paste. Cook 2 minutes, stirring, until paste darkens slightly.

Add crushed tomatoes, dried oregano, dried basil, salt, and pepper. Stir.

Simmer on medium-low 15 minutes, stirring occasionally, until sauce thickens.

Toss with cooked pasta and serve with grated parmesan.
