Weekend Waffles

Crispy-outside, fluffy-inside Belgian-style waffles made from scratch. The secret is whipped egg whites folded into the batter and a very hot waffle iron. Serve with butter and maple syrup for a classic breakfast-for-dinner night, or set out fruit, whipped cream, and chocolate chips for a topping bar.

Parent noteWaffles with maple syrup are one of the highest-acceptance breakfast-for-dinner options. The topping bar adds engagement. Keep waffles in a 200°F oven on a rack (not stacked) so they stay crispy. Contains gluten, dairy, and egg.

Ingredients

  • All-Purpose Flour2 cups
  • Eggs, separated3 large
  • Whole Milk1 3/4 cups
  • Unsalted Butter, melted5 tbsp
  • Baking Powder1 tbsp
  • Granulated Sugar1 tbsp
  • Vanilla Extract1 tsp
  • Salt1/2 tsp
  • Maple Syrup, for serving1 cup

Method

  1. 01

Preheat waffle iron to high heat.

  2. 02

Separate eggs. Whisk yolks with milk, melted butter, and vanilla in a large bowl.

  3. 03

Add flour, baking powder, sugar, and salt to the yolk mixture. Stir until just combined; small lumps are fine.

  4. 04

Beat egg whites in a separate bowl until stiff peaks form.

  5. 05

Fold egg whites gently into the batter in two additions. Do not over-fold; streaks of white are okay.

  6. 06

Spray waffle iron with cooking spray. Pour batter (about 3/4 cup per waffle). Cook 4-5 minutes per waffle until deep golden and crispy.

  7. 07

Keep waffles warm on a rack in a 200°F oven. Serve with maple syrup, butter, and toppings.
