Ingredients

  • Stew Beef (chuck), cut in 1.5-inch cubes1 1/2 lbs
  • Russet Potatoes, cubed1 1/2 lbs

  • Beef Broth2 cups

Method

  1. 01

    Cut stew beef into 1.5-inch cubes if not already cut. Season with salt and pepper.

    Set Instant Pot to Sauté mode. Add oil and brown beef in batches, 3-4 minutes per batch. Transfer to a plate.

    Add onion and garlic to the pot. Cook 2 minutes.

    Add tomato paste and stir for 1 minute.

    Return beef to pot. Add beef broth, Worcestershire sauce, carrots, and potatoes. Stir.

    Lock lid. Set to Pressure Cook on HIGH for 35 minutes. Let pressure release naturally for 10 minutes, then quick-release.

    Stir in frozen peas. Taste for seasoning. For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp cold water and stir in on Sauté mode for 2 minutes.
