- Short Pasta (orecchiette, ditalini, or penne)12 oz
- Cannellini Beans, canned (15 oz)2 cans
- Diced Tomatoes, canned (14.5 oz)1 can
- Garlic, minced4 cloves
- Fresh Rosemary (or 1/2 tsp dried)1 sprig
- Olive Oil3 tbsp
- Parmesan, for serving (optional)1/2 cup
Method

Cook pasta in heavily salted boiling water per package directions. Reserve 1 cup pasta water.

While pasta cooks, heat olive oil in a large skillet over medium heat. Cook garlic and red pepper flakes 1 minute (skip pepper flakes for kids).

Add diced tomatoes and rosemary. Simmer 5 minutes.

Add cannellini beans. Use the back of a spoon to mash about a quarter of the beans against the pan to thicken the sauce.

Add drained pasta to the skillet. Toss with a splash of pasta water until the sauce coats everything.

Season with salt, finish with a drizzle of olive oil, and top with parmesan.
