Ingredients
- Sirloin Steak3/4 lbs
- Cooked Jasmine Rice (day-old)4 cups
- Eggs3 large
- Frozen Peas and Carrots1 1/2 cups
- Green Onions4 stalks
- Soy Sauce3 tbsp
- Sesame Oil1 tbsp
- Oyster Sauce1 tbsp
- Vegetable Oil3 tbsp
Method

Slice steak thinly against the grain. Season with salt and pepper.

Heat 1 tbsp oil in a wok over high heat until smoking. Sear steak in a single layer 1–2 minutes per side. Remove and set aside.

Push rice to sides, add 1 tbsp oil to center, scramble eggs until just set, then mix into rice.

Add remaining oil, peas and carrots, and stir-fry 2 minutes.

Return beef to pan. Add soy sauce, oyster sauce, and sesame oil. Toss everything over high heat 2 minutes. Garnish with green onions.
