- Jasmine Rice2 cups dry
- Boneless Skinless Chicken Thighs1 1/2 lb
- Teriyaki Sauce1/2 cup
- Vegetable Oil1 tbsp
- Avocado (optional)1
- Carrots (shredded)2
- English Cucumber1
- Frozen Shelled Edamame (optional)1 cup
- Green Onions3 stalks
- Sesame Seeds (optional)1 tbsp
Method

Cook rice according to package directions.

Cut chicken thighs into bite-sized pieces. Season with salt and pepper.

Heat oil in a skillet over medium-high heat. Cook chicken pieces 5-6 minutes until golden and cooked through.

Pour teriyaki sauce over chicken and toss to coat. Simmer 2 minutes until sauce is sticky.

Prep toppings: slice avocado, shred carrots, slice cucumbers, shell edamame, and slice green onions.
