Ingredients
- Egusi Seeds (ground melon seeds)1 cup

- Fresh Spinach6 cups

- Roma Tomatoes3

Method
- 01
Blend egusi seeds with a little water into a thick paste.

Heat palm oil in a pot. Sautee diced onion, then add blended tomatoes and scotch bonnet. Cook 10 minutes.

Add seasoned beef or chicken pieces with stock. Simmer 15 minutes.

Drop spoonfuls of egusi paste into the soup. Cover and cook 10 minutes without stirring.

Add chopped spinach, stir gently, and cook 5 more minutes. Serve with pounded yam or fufu.
