- Long Grain Rice1 1/2 cups
- Dried Black-Eyed Peas3/4 cup
- Baking Soda (optional)1/2 tsp
- Scotch Bonnet Pepper1
- Fresh Ginger1 inch
- Tomato Paste1 tbsp
- Vegetable Oil2 tbsp
Method

Rinse black-eyed peas, place in a pot with water, and boil for 15 minutes until half-cooked.

Add rinsed rice, baking soda (for color if no millet leaves), and enough water to cover by 1 inch.

Bring to a boil, then reduce heat to low. Cover and cook 25 minutes until water is absorbed.

Meanwhile, make a quick shito: blend scotch bonnet, ginger, and dried shrimp, then fry in oil with tomato paste for 5 minutes.

Fluff waakye with a fork. Serve with shito, boiled eggs, and fried plantains.
