Ingredients

  • Cooked White Rice (day-old preferred)4 cups
  • Boneless Skinless Chicken Thighs (diced)1 lb
  • Large Eggs3
  • Frozen Peas and Carrots1 cup
  • Frozen Corn Kernels (optional)1/2 cup
  • Soy Sauce3 tbsp
  • Sesame Oil1 tbsp
  • Vegetable Oil2 tbsp
  • Green Onions3 stalks
  • Sesame Seeds (optional)1 tbsp

Method

  1. 01

    If using freshly cooked rice, spread it on a sheet pan and let it cool 10 minutes (day-old rice works best).

    Scramble eggs in a large wok or skillet over high heat. Break into small pieces and set aside.

    Add oil to the wok. Cook diced chicken 5 minutes until golden. Remove and set aside.

    Add frozen peas, carrots, and corn to the wok. Stir-fry 2 minutes.

    Add rice to the wok. Stir-fry 3-4 minutes until heated through. Add soy sauce and sesame oil. Return eggs and chicken. Toss everything together.

    Set up add-in stations: extra soy sauce, sriracha, sliced green onions, sesame seeds, and kimchi. Everyone seasons their bowl.
