Method

If using wooden skewers, soak in water 30 minutes to prevent burning.

Cut zucchini into 1-inch rounds, peppers into 1.5-inch chunks, and red onion into 1.5-inch pieces.

Whisk marinade: olive oil, minced garlic, herbs, lemon juice, salt, and pepper. Toss all vegetables in marinade.

Thread vegetables onto skewers, alternating colors and types.

Grill over medium-high heat 12–15 minutes, turning every 3–4 minutes, until charred and tender.
