Parent noteSome kids are cautious about lamb. Frame it as a 'special burger in a pita' and they are more likely to try it. Plain meat and pita with ketchup is fine too.

Ingredients

  • Ground Lamb3/4 lb
  • Ground Beef (80/20)3/4 lb
  • Pita Bread8 rounds
  • Plain Greek Yogurt1 cup
  • English Cucumber1
  • Roma Tomatoes2
  • Red Onion1/2
  • Lemon1
  • Dried Oregano1 tsp
  • Ground Cumin1/2 tsp
  • Fresh Dill (optional)1 tbsp chopped

Method

  1. 01

Mix ground lamb and beef with oregano, cumin, garlic powder, onion powder, salt, and pepper. Form into a flat loaf on a sheet pan.

  2. 02

Bake at 375F for 20 minutes until internal temp reaches 160F. Let rest 5 minutes, then slice thin.

  3. 03

While meat bakes, make tzatziki: mix Greek yogurt with grated cucumber (squeeze out water first), minced garlic, lemon juice, dill, and salt.

  4. 04

Prep toppings: dice tomatoes, slice red onion into thin rings, slice cucumbers, and shred lettuce.

  5. 05

Warm pita bread in the oven for 2-3 minutes.

  6. 06

Set up the gyro station: sliced meat, warm pitas, tzatziki, and all toppings. Everyone builds their own.
