  • Spaghetti or Soba Noodles12 oz
  • Peanut Butter3 tbsp
  • Soy Sauce3 tbsp
  • Sesame Oil2 tbsp
  • Rice Vinegar2 tbsp
  • Honey or Agave1 tbsp
  • Garlic2 cloves
  • Cucumber1 medium
  • Carrots2 medium
  • Red Bell Pepper1 medium
  • Green Onions3 stalks
  • Roasted Peanuts1/4 cup

Method

    Cook noodles according to package. Rinse under cold water and drain well.

    Whisk peanut butter, soy sauce, sesame oil, rice vinegar, honey, and garlic until smooth. Thin with 1-2 tbsp warm water.

    Julienne cucumber, carrots, and bell pepper.
