- Extra-firm Tofu14 oz
- Snap Peas2 cups
- Red Bell Pepper1 large
- Fresh Ginger1 tbsp grated
- Garlic3 cloves
- Soy Sauce3 tbsp
- Sesame Oil1 tbsp
- Rice Vinegar1 tbsp
- Cornstarch1 tbsp
- Vegetable Oil2 tbsp
- Jasmine Rice2 cups dry
Method

Press tofu dry, cube into 3/4-inch pieces. Toss with cornstarch.

Cook rice according to package.

Heat oil in a wok over high heat. Fry tofu 5 minutes until crispy. Remove.

Add snap peas and bell pepper, stir-fry 2 minutes. Add garlic and ginger, 30 seconds.

Return tofu, add soy sauce, sesame oil, and rice vinegar. Toss to coat. Serve over rice.
