Ingredients

  • Cooked Chicken Breast, Shredded3 cups
  • Cannellini or Great Northern Beans, Canned2 cans (15oz each)
  • Diced Green Chiles, Canned7 oz (1 can)
  • Chicken Broth4 cups
  • Onion1 medium
  • Garlic3 cloves
  • Cream Cheese4 oz
  • Cumin2 tsp
  • Chili Powder1 tsp
  • Frozen Corn1 cup
  • Lime Juice1 tbsp
  • Olive Oil1 tbsp

Method

  1. 01

    Heat olive oil in a large pot over medium. Cook onion 4 minutes. Add garlic and spices, cook 1 minute.

    Add broth, beans, green chiles, corn, and chicken. Bring to a simmer and cook 15 minutes.

    Mash about 1/3 of the beans directly in the pot with the back of a spoon to thicken the chili.

    Cut cream cheese into cubes and stir in until fully melted and incorporated. Add lime juice.

    Taste and adjust seasoning. Serve with sour cream, shredded cheese, avocado, and tortilla chips.
