- Bone-In Chicken Thighs2 1/2 lbs
- Bacon4 slices
- Pearl Onions1 cup
- Cremini Mushrooms8 oz
- Dry Red Wine2 cups
- Chicken Broth1 cup
- Garlic Cloves4 cloves
- Tomato Paste2 tbsp
- Fresh Thyme4 sprigs
- Butter1 tbsp
Method

Season chicken pieces with salt and pepper. Brown in a Dutch oven with olive oil over medium-high heat, about 4 minutes per side. Remove and set aside.

In the same pot, cook diced bacon until crispy. Add pearl onions and mushrooms; sauté 5 minutes.

Add minced garlic and tomato paste; cook 1 minute. Pour in red wine and chicken broth, scraping up browned bits.

Return chicken to pot. Add thyme and bay leaf. Bring to a simmer, cover, and cook on low for 75 minutes.

Remove lid, discard bay leaf. Stir in a tablespoon of butter to finish the sauce. Serve over mashed potatoes or crusty bread.
