  • Baby Potatoes1 lb
  • Green Beans8 oz
  • Eggs4 large
  • Cherry Tomatoes1 cup

  • Extra Virgin Olive Oil3 tbsp
  • Dijon Mustard1 tbsp

Method

    Boil baby potatoes until tender, about 12 minutes. Add green beans in the last 3 minutes. Drain and cool under running water.

    Season tuna steaks with salt and pepper. Sear in a hot skillet with olive oil for 2 minutes per side for medium-rare. Slice thinly.

    Whisk together Dijon mustard, red wine vinegar, olive oil, salt, and pepper for the vinaigrette.

    Arrange lettuce on a platter. Compose sections of potatoes, green beans, tuna, halved eggs, tomatoes, and olives.

    Drizzle vinaigrette over the salad. Serve at room temperature.
