Method

  1. 01

    Slice onions into thin half-moons. Melt butter in a large pot over medium heat. Add onions with a pinch of salt and cook, stirring occasionally, for 40 minutes until deeply caramelized.

    Add garlic and thyme; cook 1 minute. Deglaze with white wine, scraping up browned bits.
