  • Worcestershire Sauce1 tbsp

Method

    Slice onions into thin half-moons. In a large oven-safe skillet, melt butter with oil over medium heat. Add onions and a pinch of salt. Cook, stirring occasionally, until deeply caramelized and jammy, about 25 minutes. Add a splash of water if they start to stick.

    While onions cook, preheat oven to 400°F. Season chicken breasts with salt, pepper, and thyme.

    Push onions to the sides of the skillet. Add chicken breasts and sear 3 minutes per side until golden.

    Add garlic and cook 30 seconds. Pour in beef broth and Worcestershire sauce. Bring to a simmer. Spoon onions over the chicken.

    Top each chicken breast with sliced gruyere. Transfer skillet to the oven and bake 15 minutes until chicken reaches 165°F and cheese is bubbly.

    Let rest 5 minutes. Serve with the pan sauce spooned over the top.
